I first tasted lasagna in Delhi. It was too cheesy for me and I didn’t like it much. This was eight years back. With time, my love for anything cheesy has increased. I crave for cheesy things a lot every now and then. There was a pack of mozzarella cheese kept in the fridge from a long time and my husband asked me to cook something with cheese and finish it off. First I thought of making pizza but then I came across with this lasagna recipe and immediately tried it out. Though I didn’t have lasagna sheets, I made it with milk bread slices, it turned out delicious.
I have used 4 bread slices to make one part of the lasagna (as shown in the pictures). The first layering will be of white sauce – then a bread slice – then some red sauce – then again a bread slice – some spinach filling – bread – red sauce – bread – white sauce – lastly cheese.

For spinach filling:
1 cup chopped spinach
2 garlic cloves, finely chopped
2 tbsp hung curd
1/4 cup paneer, crumbles or grated
1/4 cup cheese, grated
1/2 tsp pepper powder
1/2 chilly flakes
Salt to taste
1 tsp butter
First we will prepare the spinach filling. Heat butter in a pan, add garlic, saute it for a few seconds and add spinach. Saute spinach in full flame. Once it reduces in quantity, add salt and pepper. Mix well and Switch off the flame. Transfer the mixture to a mixing bowl and let it cool. Once its cooled, add cheese, hung cued, paneer and chilly flakes to the spinach. Mix everything well and keep asode for further use.
Now the assembling part. Take one oven safe bowl in which you are planning to bake your lasagna. Clean it nicely and spread some white sauce on it (a thin layer). Now put one bread slice over the white sauce spread and apply one layer of red sauce on the other side of the bread. Put the 2nd bread slice above the red sauce spread. Now put half of the spinach filling on the slice and cover it with the third bread slice. Apply some red sauce to the third bread slice and finally cover with last bread slice applying some white sauce above it. Sprinkle generous amount of mozzarella on it. Bake in a preheated oven for 10 minutes or till the cheese starts to turn brown. Serve hot.
* I used the white sauce which I prepared for the pasta.
* I used homemade red sauce. You can use ready made pasta/pizza sauce.
* You can use cream cheese instead of hung curd. In case both are not available, use cheese spread (the plain one).
* Instead of spinach, you can use ur choice of veggies as well like capsicum, onions, etc.
