Vegetable macaroni

Sharing my son’s favourite #macaroni recipe .. absolutely #babyfriendly .. 💕 Prepared this for him without salt, chillies and ketchup for the first time when he was 10 months old and its his favourite since then.. I add lots of #veggies to increase the nutrition value and ensure to chop the veggies as finely as possible so he just doesn’t end up having macaroni 🤭 .. This is super easy to make and tastes absolutely delicious.

Ingredients:

1 cup Macaroni
1 medium chopped onions
2 small grated or chopped carrots
1 medium of chopped capsicum
1 medium chopped tomatoes
1 tsp haldi
Salt to taste
Red chilli powder to taste
Ketchup

Method:

Boil macaroni in enough water. Add salt while cooking it. Once macaroni is cooked, strain, add little oil, mix and keep aside. Adding oil will prevent macaroni from sticking to each other.

Now heat little oil or butter in a pan. Add onions, cook for one minute. Then add carrots, haldi and cook till carrots are done. Now add, capsicum, tomatoes along with salt to taste. Let the tomatoes turn a little soft. Add red chilli powder and ketchup to the veggies. Mix well and add macaroni to it. Mix wel again and cook for 2 more minutes. Done. Switch off the gas and serve.


For my son:

I took out a portion of cooked veggies before adding red chilli powder and ketchup. Later mixed macaroni, cooked veggies together and offered him.

Notes:

Adding ketchup and red chilli powder adds to the taste and colour.

You can add ketchup to your little ones portion too. I skip adding it.
