Tomato pasta, made with roasted tomatoes, cashews and fresh cream. My little one is quite fond of pasta, but we as a family really don’t enjoy it so I mostly make it for him. These pastas are made using veggies which he usually doesn’t like having like beetroot, tomatoes, spinach etc. I have already shared beetroot pasta and spinach pasta recipe, so today sharing this simple tomato based pasta which is absolutely kids friendly.
My son can’t handle spicy food but has a decent tolerance level for pepper powder. I don’t use turmeric powder or red chili powder so added cocoa powder to give it a nice color (you can skip using cocoa powder though). Add cashews for some texture and taste but its optional. The recipe is easy to follow and gets ready in a jiffy. You can add veggies of your choice but I skipped adding any other veggies.
Oh by the way, I roasted a big batch of tomatoes and made something super spicy and yummy for us. I will be sharing the recipe super soon here. For now, lets check out this kids friendly pasta recipe.
1 cup pasta
3 medium tomatoes
2 tbsp cashew
2 tbsp fresh cream
1/2 tsp cocoa powder
5 to 6 garlic cloves
1/2 tsp sugar
1 handful of sweet corn
Salt to taste
Pepper powder to taste
Cook the pasta as per the instructions given on the pack. Keep aside.
Soak cashews in hot water, keep aside.
Remove the tip of the tomatoes, make some slits on the skin so its easy to remove and roast tomatoes in high flame till the skin turns black from all sides (keep turning them, takes about 2 minutes). Once done, remove the black skin and wash them under running water if needed to get rid of all the black skin. Next, take the roasted tomatoes in a mixer jar, add garlic, cashews and blend to make a smooth paste.
In a pan, take some butter and add corn to it. Saute for a minute and add the blended tomato paste, cook in high for 2 minutes. Add cocoa powder, salt and cook for a minute. Next add cream, sugar, mix well and add pasta to it. Cook for 2 minutes and switch off the flame. Serve warm.
*You can skip adding sweet corn kernels.
*Adding sugar will enhance the taste.
*This pasta doesn’t have a lot of sauce so serve it warm.
*Add milk if you want to adjust the consistency.
*Skip salt and sugar if making it for babies under 1.
