Spinach pasta

I had planned to make spinach corn pasta for Rahyl’s dinner yesterday. Kept everything ready and thought to make it while Rahyl takes his nap. But it started to rain and turned dark outside all of a sudden. Somehow managed to get one video (swipe for video). I waited for the weather to get a little clear as it had stopped raining but Rahyl got up by then. Thankfully, he co-operated and I managed to get one picture too.. I am sure people in the opposite building who saw me doing stupid things for that one photo must have been calling me crazy 🙈 Honestly, not at all happy with the picture par chalo koi baat nahi.. happens!! Let me quickly share the recipe below. I made this especially for Rahyl. It’s super easy to make and tastes delicious. DM or tag me if you try it.

Ingredients:

1 cup boiled pasta of your choice
1/2 cup or more blanched spinach
3 garlic cloves
1/2 cup boiled sweet corn
Salt to taste
Pepper powder to taste

Method:

Take blanched spinach and garlic cloves in a mixer jar and make a purée. In a pan, add butter followed by spinach and garlic puree. Add little water too. Let it come to a boil, then add sweet corn, salt and pepper powder. Cook for a few minutes. Add pasta, toss well, cover and cook again for a few minutes. Done.

Notes:

You can add cooked rice to the spinach sauce instead of pasta or simply serve it along with roti.

I haven’t added any cheese to it. You can add if you wish to.

The pasta is not going to be saucy. It will be dry so make it just before serving.

You can add little milk or cream to the pasta too.
